Healthy Breakfast Wrap

If you are a dedicated Starbucks customer you have probably heard of their Spinach & Feta Breakfast Wrap. It is one of my favorites, so I tried to make a kale version of it at home.

Kale has been one of my favorite vegetables for some time now. The more I read about the health benefits of eating kale, the more I find myself adding it to my everyday diet.  Here is a little 411 on why Kale has been so popular among the health gurus.

Not only does it have low calories, it also has high fiber and ZERO fat! (YES). It is known to aid in digestion and elimination with it’s fiber content. Kale is also filled with lots of nutrients, vitamins, folate, and magnesium (helps me with my restless leg syndrome). Just make sure to peel off the leaf from the stem for this wrap/burrito.

Here is what I used for this recipe;  one egg, one leaf of kale, olive oil, and salt & pepper.
